The Wine Advocate:

There is a NV Amontillado Viejo Tauromaquia, an Amontillado averaging some 25-30 years of average age, produced with Pedro Ximénez grapes from vineyards classified as Calidad Superior, the vineyards with chalky albariza soils. After the biological aging under flor has exhausted the yeasts, the wine starts a longer oxidative aging in well-seasoned, neutral 500/600-liter American oak butts (casks) where the wine ages for decades in a solera system. This has to be one of the bargains of the appellation, as the quality (and age) is extremely high for the price asked. There is some softness and creaminess that makes this wine very approachable, and some might say it has a character that could have it classified as a Palo Cortado. The palate is also quite mellow and soft, approachable and drinkable. They can bottle up to 3,000 bottles per year. - Luis Gutiérrez.
