A wine that was called Bruto before has now been renamed 2016 Parajes Del Infierno Las Envidias, and if there's one wine that is completely different in the portfolio (besides the red, of course), this is it. It's mostly Palomino, a grape that was very common in the zone, where oxidative and biologically aged wines were very common. This comes from ancient vines planted on sandy soils in the village of Alcazarén that they have been slowly recovering, so the vines are ungrafted. This fermented in 300-liter barrels and four 16-liter glass demijohns, and it aged under a veil of yeasts, à la Sherry, for 24 months. The nose is spicy and nutty, with notes of green walnuts and curry, definitely organic. The palate reveals the tastiness, umami character of this kind of aging and a clearly salty finish. A wine of strong personality. 1,005 bottles were filled in November 2018.
