The 2019 Los Pasitos is a single-vineyard Baboso Negro (the variety known as Alfrocheiro Preto in Portugal) with 5% Vijariego Negro (Sumoll) from young vines planted at a density of 6,000 vines per hectare on clay-rich soils at 380 to 440 meters above sea level and pruned in a cordon de Royat way. It fermented with 100% full clusters in open-top plastic bins with indigenous yeasts and had 15 days of maceration, then it matured in a used 500-liter oak barrel for 10 months. This is quite light at 11.7% alcohol and has integrated acidity. They changed its style in the 2016 vintage, and this has remained like that. There is a pungent herbal strike here with minty notes in this short-cycle variety. It's very spicy and with fine tannins, a little shy in the flavors. Only 600 bottles were filled in September 2020.
