This is a special bottling to celebrate Hidalgo's 225th anniversary. The NV Manzanilla La Gitana Aniversario, in a large, old-style bottle, was selected from ten botas of 12-year-old Manzanilla, bottled after three years in three 1,000-liter foudres, two 600-liter botas and one 500-liter bota without being refreshed. Even after those 15 years the flor was still alive. It's very intense in color and on the nose and palate. There are no signs of oxidation and it remains fresh with a texture that has been sharpened throughout the years. It's dry and very long, with chalky minerality. This is a textbook Manzanilla Pasada, 1,792 bottles and 100 magnums were filled in June 2017.
