They have reduced the yields and introduced some used barrels for the 2020 Pago de Otazu Chardonnay, a barrel-fermented white from a 20-year-old vineyard planted on limestone and gravel soils. It fermented in French oak barrels where it matured with the lees for 11 to 12 months, avoiding too much bâtonnage. This seems young and harmonious, ripe without excess and very tasty, keeping the aromatic profile of the variety and the Burgundian method. 5,392 bottles were filled in May 2021.
