I tasted two vintages of the bota-fermented Palomino, my favorite of which was the 2016 Socaire, a great vintage in the zone, which is easy to see when tasted next to the 2017 and from the notes I had from the 2015. It matures in the topped-up botas, and it only develops a bit of flor; despite this, the wine is sharp and saline, with the freshness of the year. It has spices and notes of gunpowder, very tasty and quite different, sharp and with a sea breeze/coastal sensation. Phenomenal. This is the best Socaire I can remember. It was bottled in the second year after the harvest, in April 2018. 3,000 bottles produced. - Luis Gutiérrez.
