The second vintage of the entry-level Verdejo from Rueda (but as all the small producers, not granted appellation of origin), 2015 Cucú (Cantaba la Rana), is sourced from organically-farmed vines, partly purchased from an organically-certified grower in the cooler village of Aldeanueva del Codonal, located in the province of Segovia with the idea to provide freshness to the wine, especially in a warm vintage like 2015. The wine has slightly higher alcohol and more structure, but still keeping the freshness and approachability that makes it easy to drink and very pleasant, with character. It fermented with indigenous yeasts in small stainless steel vats where it was kept for seven months in contact with the lees. It has a good combination of volume and freshness, remaining clean and focused. They harvested very early, September 3rd, because the alcohol was going up, but there was a risk of not getting enough acidity. However, this has good acidity and freshness, and the typicity of the Verdejos from yesteryear. It's quite subtle, and with that characteristic faintly bitterness in the finish. A triumph over the conditions of the vintage. This is young, approachable and with character. 23,500 bottles were filled in May 2016.
