Sara Pérez considers 2016 a special vintage that she likes for whites and rosés—wines with tension and a lower pH, as seen in the 2016 Dido Blanc. Part of the wine was macerated with skins for quite a long time, which provides for subtle tannins that are nicely integrated with the chalkiness from the soils. There's more Macabeo than Garnacha Blanca and a little Xarel.lo, with a substantial part coming from old vines that give depth and aging potential. 18,000 bottles produced. It was bottled in November 2017. - Luis Gutiérrez. 

Peñín:

Color: amarillo brillante. Aroma: fruta escarchada, cítricos, floral, especiado, piedra seca, frutos secos. Boca: estructurado, sabroso, potente, mineral.
