The white sparkling 2021 Kimera Espumoso Ancestral was produced with Garnacha Blanca grapes (and 20% Garnacha Tinta with one year in barrel) that finished fermenting in bottle following the ancestral method. It was disgorged after nine months in bottle with the lees. There's finesse and elegance here, with a bone-dry palate, and the result is a lot more serious, clean and precise, better than the majority of ancestral whites. 4,000 bottles produced.
