The Wine Advocate:

The ancestral sparkling rosé 2021 Les Danses was just disgorged after 25 months with lees in bottle. It has very good freshness, with moderate alcohol (11.5%) and a very low pH and high acidity that translates in a vibrant palate with effervescent freshness and bright flavors. It's a lot more serious than the majority of ancestral sparkling wines, not quite in the pét-nat category. It has leesy and smoky notes, integrated bubbles and a creamy texture. 5,000 bottles produced.
