The 2019 Parotet is quite different from previous vintages, as it's now 60% Arcos and 40% Mandó (the 2017 was 90% Mandó and 10% Arcos). It fermented with 30% full clusters in stainless steel with indigenous yeasts and matured in 2,600-liter amphorae (tinajas) for 12 months. This is always the more serious and austere of the "old" wines. This has lower alcohol and a peppery profile, spicy and very interesting. It's surprisingly fresh and light, with a profile that some might place in the Atlantic rather than in the Mediterranean. I love the nose; it's very tasty, peppery and floral, nuanced and different. It feels more defined and different from Safrà. 10,000 bottles produced. It was bottled in June 2020.

Buen vino. Me encanta. No me pierdo ninguna añada. Muy suave al paladar.
Muy fan del Parotet. Mantiene el nivel y muy cerca de su hermano mayor.
