I was really looking forward to the biologically aged 2016 Tío Raimundo, the third vintage of this Moscatel aged under a veil of yeast. Not produced in 2015, this 2016 already has the flor veil in barrel, where they are creating a solera with just the yeasts (it's not a blend of vintages) and where the wine ages for three years. This is completely different and I would say unique. It's very citrusy, and the combination with the yeasts gives it completely different hints of marzipan, fresh and floral (orange blossom), with notes of aniseed, very complex. It's perhaps less textured than the 2014; it feels a little sharper with a chalkier texture. They used different barrels, French, American and Hungarian oak and also quite a bit of acacia wood that seems to work quite well with Moscatel. 1,200 bottles produced. It was bottled in March 2020.
