The white 2021 Bitoku was produced with Treixadura (and 5% Loureira) from their 20-year-old vineyard As Tapadas do Cabildo planted on schist soils. Half of the grapes underwent a cold maceration, with the other half put through direct pressing, then fermented with indigenous yeasts in stainless steel, where it matured for two winters. It has a moderate 12.2% alcohol and mellow acidity, as 2021 was a dry but cooler vintage when the grapes didn't achieve full ripeness. The wine is elegant and a little shy, clean, faintly balsamic and herbal, with a varietal palate and a bitter finish. 6,650 bottles produced. It was bottled in May 2023.
