I found a lot of character in the nose of the 2018 bottling of the NV Fino Dos Palmas with notes of iodine, low tide, seaweed and rusty nails. The palate is concentrated and full, with pungent, clean and precise flavors and the drying sensation of a long aging under flor. I would have said the wine could have been older than the eight years under flor that they stated. 1,335 half-liter bottles were filled in October 2018.
Fino is all the better with age, as the veil of flor dies out and the oxygen begins to add complexing notes. Dos Palmas, the big brother to Tío Pepe at 8 years old, shows the individuality of the cellar with great refinement and memorable intensity.
Color: dorado.
Aroma: frutos secos, yodado, levaduras de flor, notas amieladas.
Boca: lleno, fino amargor, redondo, matices de solera.
Sit back and enjoy the fino show! Enveloping bouquet with a whole spectrum of dried fruit. Concentrated, but very dry with noble austerity and dramatic freshness. Drink now. An average of eight years aging on the lees.

Quizás me esperaba que estuviera más cerca del Tío Pepe Tres Palmas. No merece la pena comprar esta botella, mejor ir al Tres Palmas.
