Coupage navarro composto pelas variedades Merlot e Cabernet sauvignon, vindas da vinha Pago de Otazu, que tem denominação de origem protegida própria. Depois de um estágio combinado em barricas novas e usadas, temos um tinto super complexo, com um final longo e agradável em boca e aromas marcados por frutos vermelhos e toques minerais e especiados.

Vista
Vermelho cereja picota, densidade alta, muito brilhante.
Nariz
Complexo dominado por frutos vermelhos e pretos, como groselhas e amoras, que dão lugar a notas tostadas e especiadas muito elegantes.
Boca
Entrada suave e passagem aveludada e complexa. Fresco, equilibrado e persistente.
Temperatura de servir
16 ºC.
Combinação
Patês e queijos, pratos de caça menor: faisão e perdiz, e carnes grelhadas e leitão assado.

Vinha e preparação

Colheita
Vindima manual em caixas de 12 quilos.
Vinificação
Criomaceracção durante 7 dias a 5 ºC antes da fermentação alcoólica, que rolou em pequenos depósitos de betão de 40 hectolitros, seguida de uma fermentação maloláctica em barricas de carvalho francês.
Envelhecimento
18 meses em barricas de carvalho francês.

The 2022 Pago de Otazu has more Merlot and less Cabernet Sauvignon than the 2021 I tasted next to it, approximately a proportion of 61/39. They are evolving in their viticulture and knowledge of their soils, removing herbicides and working toward the improvement of the quality of their wines while also reducing volumes. This has 14.5% alcohol with good freshness showcased by a lower pH of 3.42. They were able to extract floral aromas from the Merlot, which is quite remarkable, and the ripeness feels more balanced. The wine is juicy and the oak is neatly integrated and folded into the wine. They have lowered the time in barrel of the different lots, and it shows. It has the black pepper spiciness the grapes are capable of, and it's tasty, balanced and elegant, an amazing value for money. Like the white, this has to be the finest year of this cuvée so far. 23,520 bottles produced. It was bottled in June 2024.
