A sensatez a que se refere o nome deste vinho é o pilar em que Norrel Robertson assenta o seu processo de elaboração. Neste tinto sólido e estruturado, a casta Syrah, acompanhada de uma pequena percentagem de Viognier, dá origem a um conjunto muito aromático, amplo e untuoso. Uma referência que irá cativar os amantes da casta rainha do Rhône.

Poderoso e com um atraente bordo púrpura claro.
Nariz
Profundo, complexo e cativante. Predominam os aromas de groselha preta e violetas, dando lugar a notas mais carnudas e azeitonas pretas.
Boca
Redondo, sólido e untuoso. A madeira está perfeitamente integrada e o vinho apresenta um final longo e persistente.
Temperatura de servir
É recomendado servi-lo a 16 ºC.
Consumo
Ótimo até cerca de 2029 se for mantido em boas condições.
Combinação
Ideal para acompanhar pratos de carne vermelha, guisados tradicionais e receitas de leguminosas saudáveis.

Vinhedos situados no município de Villarroya de la Sierra, a 950 metros de altitude. Cultivadas de forma biológica e com infusões de plantas e técnicas regenerativas.

Vindima manual em caixas de 20 quilogramas.
Vinificação
As uvas foram armazenadas a 1-2 ºC durante 48 horas numa câmara frigorífica, antes de serem suavemente esmagadas e demolhadas a frio durante cerca de 6 dias. Fermentado com 6% de Viogner.
Envelhecimento
Estágio de 14 meses em diferentes tipos de barricas.
Engarrafamento
Teve lugar em março de 2023.

The darkest of the reds, the 2020 Dos Dedos de Frente is a ripe and powerful Syrah. It's showy, perfumed and heady, hedonistic and supple, with less oak than in previous years. It comes from grapes from a supplier working together against ripeness and alcohol, working organically and with infusion of plants and regenerative agriculture. It fermented with some 6% Viognier. The change in this is 13.9% alcohol, avoiding high ripeness, using more neutral barrels and letting the wine rest in tank after the élevage in oak, delivering a wine with more varietal character à la Rhône, with a mixture of violets, tar and bacon fat. The palate is medium to full-bodied with abundant but fine-grained tannins. 6,995 bottles produced. It was bottled in March 2023.

James Suckling:

Smoky and meaty character here with plums and dark cherries as well as sweet spices and bark. Medium- to full-bodied, with fine, polished tannins. Spicy and dark-fruited. Broad-shouldered and even on the palate with a juicy, vibrant finish. Hints of crushed stones and white pepper, too. 95% syrah and 5% viognier co-fermented. Drink or hold.
