Cuevas de Arom Os Cantals 2021

The 2021 Os Cantals was produced with grapes from a dry-farmed and head-pruned 70+-year-old vineyard on red, iron-rich soils at 700 meters in altitude. It fermented in open-top oak barrels with indigenous yeasts and full clusters that were foot trodden with a maceration of 67 days. The wine matured in concrete egg and one oak cask for 12 months. It has notes of wild berries and herbs, a fine-grained texture and a strong stony sensation. It has no notes of excess ripeness and has very good freshness and balance. 2,632 bottles were filled in January 2023.
