Los Pasitos 2022

The 2022 Los Pasitos is a single-vineyard Baboso Negro (the variety known as Alfrocheiro Preto in Portugal) with 5% Vijariego Negro (Sumoll) from young vines planted at a density of 6,000 vines per hectare on clay-rich soils at 380 to 440 meters above sea level and pruned in a cordon de Royat way. It fermented with 100% full clusters in open-top plastic bins with indigenous yeasts and had 14 days of maceration. It matured in used 500-liter oak barrels for 10 months. It has contained ripeness at 12.4% alcohol and balancing acidity. Despite everything, this feels riper than the 2021, but even when the grapes are riper, the acidity is still extremely high. The palate reveals abundant, slightly dusty tannins. 1,300 bottles produced. It was bottled in September 2023.
