Pertencentes à coleção de "selecções de parcelas" de M. Chapoutier, os vinhos de Ermitage possuem um rico passado histórico. Alexandre Dumas e o czar Nicolau II estiveram entre os seus clientes habituais. A parcela Le Pavillon é vinificada desde 1989 e tem uma produção de cerca de 7.000 garrafas por ano, o que nos dá uma ideia de como pode ser pequena e escassa. Na sua história, foi classificado 10 vezes com 100 pontos Parker e entre as colheitas de 2009 e 2012 este vinho recebeu essa pontuação consecutivamente.

Vermelho granada profundo com reflexos roxos.
Nariz
Alcatrão e fumo, com notas de framboesa, amora, noz e alcaçuz.
Boca
Complexo, com um ataque poderoso. Depois é equilibrado com um final longo e notas de alcaçuz, tabaco e cacau.
Temperatura de servir
É recomendado servi-lo a 16 ºC.
Consumo
Óptimo até cerca de 2045 se mantido em condições excelentes.

Vinha e preparação

Idade
65 anos em média.
Solo
Sedimentar em subsolo granítico.
Colheita
As uvas são vindimadas à mão, no limite da sobrematuração. Devido à sua idade, dão rendimentos muito baixos.
Vinificação
Completamente desengaçadas, as uvas são esmagadas uma ou duas vezes por dia para garantir uma boa extração. As uvas fermentam em cubas de betão a uma temperatura não superior a 32ºC. A maceração dura 4 a 5 semanas, sendo apenas utilizado o mosto gota.
Envelhecimento
O vinho é envelhecido durante 18 a 20 meses em barricas de carvalho francês (30% de carvalho novo).

Coming all from the pure granite soils of the Bessards lieu-dit, on the western side of Hermitage, the 2018 Ermitage Le Pavillon is 100% Syrah that was all destemmed and aged 18 months in just 15% new French oak. This beauty has closed down since bottling and will need considerable bottle age, but it’s a beauty. Deep purple-hued, with a meaty, gamey bouquet of black and blue fruits, crushed rock, liquid violets, olives, and acacia flowers, this sensational wine hits the palate with full-bodied richness, a tight, backward mouthfeel, present tannins, and a great finish. As I wrote last year, this isn't for those seeking instant gratification and a solid 7-8 years of bottle age are warranted, but I suspect it will earn a triple-digit score at maturity and should have 40-50 years of longevity.

The Wine Advocate:

The 2018 Ermitage le Pavillon is a plush, full-bodied beauty that combines fruity notes of blueberries with savory notes of black olives and marries them together with rich, earthy notes. Almost creamy across the mid-palate, it finishes with soft waves of velvety tannins. I expect this will firm up a bit prior to bottling, then drink well for two decades.

Decanter:

This is silky with real tannic finesse and while it doesn't have the intensity of some vintages it has beautiful balance and purity with sweet plum, violets and blueberry. It’s not as long as some but still displays that Bessards straightness of character. Will drink soon. Drinking Window 2022 - 2033.
