The bottling from April 2023 of the dark, spirity and pungent NV Fondillón Luis XIV Edad Superior a 50 Años - Tonel Calderones was from a different cask (all the info is handwritten on the back label) that exceeds 50 years of age. Time has concentrated everything, and the wine now has 16.15% alcohol with a pH of 3.31, 6.8 grams of acidity and 55 grams of sugar that go unnoticed. It has a note of varnish, roasted coffee, dark chocolate and something rustic/earthy, iron rust, iodine and low tide. It's pungent, persistent and long, lifted by the volatile touch. This is phenomenal, a wine to sip very slowly; it's piercing, almost painful and nearly indestructible. 300 half-liter bottles were filled from their 19th-century solera. - Luis Gutiérrez.
