O amontillado é um vinho inicialmente elaborado com um estágio biológico sob véu da flor, seguido de uma fase oxidativa. Esta combinação torna qualquer amontillado um vinho muito singular, cuja identidade é marcada pelo estágio biológico. O da Bodegas Tradición tem uma idade média de 32 anos e é o resultado da combinação de soleras provenientes de Jerez, El Puerto de Santa María e Sanlúcar de Barrameda, daí o seu caráter único.

Essentially a continuation of Bodegas Tradición's exceptional Fino, with 32-35 years of age the Amontillado shows all of the savour and complexity that one would expect. Intense
hazelnut, wood polish and burnt orange zest aromas are followed by a deeply savoury, toasted pecan and soy-flavoured palate. With superb drive and detail this is a powerful, high-toned style but far from austere; instead, its extended maturation has imparted a certain softness or amabilidad. Stellar.
The 1/24 lot of the NV Amontillado VORS is from July 2024 (handwritten on the label after the bottle number, 770/2400 in my case). It is a wine of exceptional complexity and elegance, true to the style, combining a biological and oxidative phase of aging, which gives it the best of both worlds. It's subtle and elegant, with great balance, incredible for the old age and the concentration that has given it 21% alcohol and 9.94 grams of acidity that lift it up. It's nutty, volatile, saline and complex, very powerful and pungent, with a very long aftertaste. 2,400 hand-numbered bottles were filled in July 2024.
This 30-year-old Amontillado is certainly the most concentrated and prodigiously scented wine in our Best In Show collection this year, and if you do procure a bottle, it might be best to anticipate tasting it in thimble-like quantities, albeit in the best glasses you can lay your hands on. Even a thimbleful would be an experience. The colour is light walnut, and among the many notes you might find in the aromas are dried apricots and figs, pounded walnuts, linseed, orange zests, saffron and cardamom, as well as hessian and olive oil. The palate is almost painful by dint of its concentration, and it wouldn’t be hard to find another handful of two of allusions here. It’s weighty, too; profound bitter notes play a role in its profile; it seems saline; and on the palate there’s an acidity which surprises, given that the wine in your glass began life as a low-acid Palomino. Can you taste the ghost of flor, too? We felt you can, hidden in the distinctive lick of yeasty umami loitering in the aftertaste.
