The 2015 Salvatge Brut Nature was produced with a blend of 51% Macabeo for structure, 38% Parellada and 11% Xarel.lo matured in bottle for at least four years after the second fermentation. It's fresh with a pH of 2.98 and 12% alcohol, and in the best years, it's released as Brut Nature, like this time when it only has 2.8 grams of sugar. I like it like this. 12,489 bottles produced.
