Bina é a mais recente criação da Bodegas Luis Pérez, um dos projetos que está a marcar a diferença no âmbito de Jerez. Sob a liderança de Willy Pérez, recuperam o estilo tradicional de vinificação da região com os chamados vinhos de pasto. Aqui encontramos uma expressão pura, precisa e vertical da casta Palomino fino do seu vinha homónimo.

The new 2023 Bina is a special plot from San Cayetano in Macharnudo, a steep 1.2 hectares of north-facing vines that were harvested early and reached a contained 10.8% alcohol with a completely different style, not showing the sun because they cannot wait to pick this plot because of the steep slope. It matured in Jerez casks for 18 months and was always topped up, but it still has the Fino character; it's concentrated and powerful but weightless, with no oak, with acidity and limestone, with lots of dry extract, crystalline and defined, with an ethereal character. A more ethereal expression of Macharnudo, it has acidity and salinity. Only 800 bottles were filled in May 2025. - Luis Gutiérrez.
