Nariz
Notas sedutoras de praliné de noz doce. Notas de violetas, menta e pimenta verde. Os grãos de café recém-torrados e o couro da sela de montar aportam complexidade ao aroma.
Boca
Equilibrado, fresco e suculento. Encontramos notas de frutos vermelhos (mirtilo e framboesa silvestre misturados com licor de cereja). As notas de pastelaria lembram a tarte de amoras assada. Os toques doces equilibram-se com os sabores de orégãos e tomilho, e uma impressão férrica e de pedra de ferro que, sem dúvida, se deve ao terroir.

Recomenda-se servir a 16 ºC.

Clima
As condições foram as melhores dos últimos 20 anos, o que se traduziu num excelente rendimento. Em geral, as condições climáticas do verão e do outono foram mais frescas do que a média, o que permitiu que as uvas Cabernet sauvignon amadurecessem lenta e uniformemente, com um grande caráter varietal. Sem dúvida, uma colheita excepcional.

As with the multi-region Bin 707, the Coonawarra-only Bin 169 returns in 2021 after a year of absence due to fruit quality in 2020 not being up to par. And what a return it is in this near-perfect vintage for Coonawarra, demonstrating why this region is so fêted for Cabernet Sauvignon. More on an elegant red-fruit spectrum than the dense, dark black berries of Bin 707, this is correspondingly lithe and lifted, with exotic notes of potpourri, blue ink, fresh mint tea and liquorice joining concentrated boysenberry, pomegranate, cigar box spice, and firm but fine coffee tannins. Very complex and layered with a welcome light hand on the oak: 16 months in French hogsheads, 51% new. Exceptional this vintage, speaks strongly of its terroir and represents a great buy for the price. To be released globally via the Place de Bordeaux in March 2024 at £175.

For the record, 2021 is exceptional across South Australia. Choosing the best wines is, at times, like pulling needles from a haystack. Crushed blackcurrants, a waft of sage, dried lavender and black olive paste are lathered across an impenetrably juicy finish that runs very long. A lick of Coonawarra menthol. Just a lick. This will age very well and I may be underscoring this today. Drinkable now, but best from 2026.

The 2021 Bin 169 Coonawarra Cabernet Sauvignon is the premium Cabernet in the range that matured in French oak (16 months, 51% new) and (70% American oak), and as a result, perhaps unsurprisingly, it is the more elegant wine of the pair on release. You get leafy cassis, raspberry, red apple skins, ferrous notes, pomegranate molasses, tobacco and some bay leaf—very pleasing. An intensely powerful wine, it's robust in its way but lithe too. 14.5% alcohol, sealed under natural cork.
