Vinha e preparação

Descrição
Situa-se a poucos passos da pequena vila medieval de Riparbella, na encosta oeste de uma colina de frente para o mar, rodeada por vegetação mediterrânica que protege naturalmente a vinha. Cultivada de acordo com as regras biodinâmicas.
Solo
Solo de cascalho e argila, que dá nome à adega.
Colheita
A vindima manual iniciou-se a 5 de agosto com a vindima da casta Merlot e concluiu-se a 21 de setembro com a Petit Verdot.
Vinificação
As diferentes parcelas e variedades foram vinificadas separadamente em tanques de cimento e madeira, com fermentações espontâneas lentas e extrações suaves.
Envelhecimento
Após a fermentação malolática, os vinhos selecionados foram barricados e, em seguida, envelheceram durante 14 meses em barricas com 30% de carvalho novo. Após o estágio, o vinho repousa em depósitos de betão durante dois meses antes de ser engarrafado e mais um ano em garrafa.

Falstaff:

Dark ruby red colour with fine purple reflections. On the nose initially offers fine savouriness, cheese rind, cassis, blackberry, some mint, as well as fine earthy notes and Mediterranean herbs. On the palate reveals creamy notion and course, dense and finely meshed, shows juicy tannins, spans widely, comes back again and again juicy and punchy, long.

James Suckling:

This is fresh and crunchy with notes of red and dark berries, as well as spices and citrus peel. Medium- to full-bodied. It is polished and velvety with toned acidity and a polished finish. 32% cabernet franc, 24% merlot, 19% cabernet sauvignon, 18% syrah and 7% grenache. Made from biodynamically grown grapes with Demeter certification. Try from 2026, but already beautiful.

Wine Enthusiast:

The nose balances dark fruit and berries with the fresh levity of white pepper, mint and eucalyptus. On the palate, notes of vanilla bean and dark chocolate underscore the juicy broadness of the fruit, but a hot, peppery finish presents a thought-provoking contrast and prompts a meditative finish.

Closed in a yellow wax capsule, the Caiarossa 2020 Caiarossa Bianco is an oak-fermented blend of Viognier and Chardonnay that rests on the fine lees. This elaborate process gives the wine beautiful volume, depth and smoothness with fragrant aromas of orange blossom, pastry cream and sweet almond. This is a tonic and vibrant blend that shows the best side of a Tuscan white wine.
