O nome desta gama de San Cobate é uma homenagem ao antigo mosteiro do século XI situado na propriedade onde hoje se encontra a adega. Bancales del Jalón é , portanto, uma das suas melhores parcelas, com socalcos que apresentam diferentes orientações e solos onde cresce uma casta Tinto Fino de caráter fresco e delicado.

The Wine Advocate:

One of three single-vineyard Tempranillos, the 2019 San Cucufate Altos del Viso is from a plot that was planted in 1986 at 910 meters above sea level on stony limestone soils. It fermented with 12% to 15% full clusters and indigenous yeasts in stainless steel and matured in used 228-liter barrels for eight to 10 months and a further six to eight months in 2,500-liter oak vat. 2019 was a very warm and ripe year, for them the most challenging they have lived, and the wines show the character of the year, which is also something they want. It has 14.3% alcohol with a pH of 3.63 and 5.36 grams of acidity. It's powerful, ripe and concentrated, with a Mediterranean character of aromatic herbs and abundant, slightly dusty tannins. This is the single-vineyard wine with more finesse and freshness. 1,212 bottles and 80 magnums produced. It was bottled in March 2022.
