61 Dorado en Rama é um vinho único que tira o melhor da uva Palomino na denominação de origem Rueda, uma uva condenada a desaparecer, já que a sua plantação foi proibida, mas da qual a cooperativa lasecana cuida com carinho de cepas centenárias com o objetivo de continuar as elaborações originais da zona. Este vinho é uma fiel lembrança do vinho branco fortificado que era no Século de Ouro, sendo também o vinho da Corte na época dos Reis Católicos. Não tem colheita, esta seleção é a única 'saca' das botas em 2024

Selecção de uvas das variedades Palomino fino e Verdejo de vinhas centenárias.
Vinificação
É elaborado pelo método tradicional mais nobre, criado em botas de Jerez, com 1/6 da sua capacidade vazia para favorecer a formação do seu véu de leveduras indígenas. Uma única 'saca' anual. Depois, é reabastecido com vinho envelhecido durante um ano em depósito de betão, que traz os nutrientes necessários para manter o véu. O que diferencia os vinhos de estágio biológico desta zona é que eles perdem o véu durante o outono e o inverno, o que faz com que a oxidação seja lenta e dê personalidade própria.

Decanter:

Oxidative with notes of butterscotch, hazelnuts, bread dough and refreshing acidity. Layer after layer of complexity on the palate and fantastic, long finish. Very impressive.

The Wine Advocate:

I got an unusual bottle of the nutty and amber colored NV 61 Dorado en Rama, which clearly displays the bottling date and number of bottles on the neck label—1,100 bottles from May 2024. It has an intense nose that is expressive and redolent of a young Amontillado, with aromas or roasted nuts, a touch of varnish and some spices. The palate is very tasty, with an almost salty twist. This is a blend of Palomino Fino and Verdejo that has 17% alcohol and very good acidity (6.55 grams) and freshness (pH 3.09). It was selected from 13 Sherry barrels that are not fully topped up and are allowed to develop a thin veil of flor yeasts that dies down during the autumn and winter and allow for a slow oxidation. It's bottled unfined and unfiltered "en rama" and, therefore, is a bit cloudy. It's full of character and delicious.

Tim Atkin:

An important part of the history of the winery and the region, this wine always impresses  and if anything, is showing even greater finesse and elegance. It is a fabulous expression of the style with zesty citrus peel that combines with nougat, caramel and coffee notes. The woody notes from extended oak ageing are appealing, offering some woody spice and polished aromas, adding to the complexity of the wine. It is at once direct but rich, and hugely satisfying! 2026-36. (Beth Willard)
