Descrição

O Tresillo Amontillado Fino faz alusão a um antigo jogo de cartas muito conhecido na época, com o qual a Bodegas Emilio Hidalgo pretendia prestar homenagem àqueles momentos em que as gerações passadas o desfrutavam acompanhadas de um copo deste xerez. Trata-se do resultado de um envelhecimento inicial como vinho Fino durante mais de dez anos, seguido de um envelhecimento ao abrigo da lenta ação do oxigénio durante o resto do tempo, atingindo uma idade média entre os 15 e os 20 anos. Segundo a própria casa de Jerez, trata-se do reflexo da ação conjunta do enólogo, bem como do microclima e da evolução do vinho na própria adega. Um vinho que se destaca pela sua delicadeza e elegância, capaz de manter o seu caráter mais vínico e prolongado, em consequência da sua fase oxidativa final.

Acompanha muito bem azeitonas, frutos secos, enchidos ibéricos e queijos leves e semicurados. É também perfeito com amêijoas ou navajas, moelas de borrego ou rins, bem como com todo o tipo de cogumelos e peixes azuis, como o atum grelhado ou em sashimi ou tataki, e também com pratos marinados.

El Tresillo, named after a card game once popular in Jerez, has two versions: one adolescent,
aged ten years under flor and five without, labelled as Amontillado Fino in the past (though
that is no longer an option), and a very limited selection from the foundational 1874 solera,
labelled with precisely that date as "Amontillado Viejo,", which is reviewed just below.
I have provocatively given a higher score to the former, because it is such a drinkable,
complex, life-enhancing wine, as opposed to its older sibling which many people will find
difficult to actually drink. In any case even the younger El Tresillo is a sherry of staggering
intensity and complexity, with massive wood oxidation and pronounced almondy rancio
dominating the profile. Seriously taut and lemony-zesty, this shows a towering personality.

The NV El Tresillo Amontillado Fino is from the El Tresillo solera (hence the same name as the 1874 Amontillado). It is basically a Fino that has completed its biological aging, alcohol level adjusted to 17%, the flor has disappeared and has only started its oxidative aging towards an Amontillado. This would be a Fino Amontillado, a category that does not officially exist anymore. It’s something between an old Fino and a young Amontillado. It has a combination of both the saline and marine notes of the biological aging and incipient notes of hazelnuts and a touch of varnish from the oxidative cycle.
