Prensagem e encubamento em depósitos de aço inoxidável sem desengace prévio. Fermentação com leveduras indígenas, com ligeiras remontagens e extrações. Malolática posterior.

15 meses em cubas de madeira de 100 hectolitros.
Engarrafamento
Em janeiro de 2026, após a filtração e a clarificação.

The Wine Advocate:

The 2023 Las Violetas was selected from the zone called Valverde in Cebreros, from three small plots at 950 meters above sea level on shallow sandy granite soils. They used 40% uncrushed grapes, 30% whole bunches and the rest must for the fermentation in concrete with indigenous yeasts, and the wine matured in 2,000-liter oak vats for one year. It has 14% alcohol, a pH of 3.28 and 5.7 grams of acidity. This is the palest of the reds this year; it's bright ruby colored, very floral and light, with an ethereal finish and tension, freshness and elegance. It has a fine thread, chalky tannins and great balance. It has a very expressive nose that is floral and aromatic with notes of thyme, rosemary and even fennel. Despite being very young, this is the one red that feels more harmonious. I believe this is going to age very nicely in bottle. 5,500 bottles produced. It was bottled in October 2024.
